Icewine is something extraordinary, from it’s harsh environment to its particular production. Only the healthiest grapes can weather the freezing temperatures and because of the juice’s concentration, many more grapes are needed per bottle. The production is also very risky since the grapes could rot before the mandatory −8 °C takes place and if it does, a large labour force is needed to harvest the grapes in only a few hours. As you can see, the volatility of icewine is exactly what makes it so special.
