The wonderful thing about pizza is how versatile it is. How you can be so creative with the toppings, but no matter what you add, it’s still a pizza. Thin-crust, deep dish, whole wheat, gluten free, the crust can even be made of vegetables or meat. From the classic pepperoni and cheese to asparagus and artichokes, it always comes out delicious.

The modern pizza was originally invented in Naples, Italy and has since spread across the world. The most well known pizza would be the Margherita, a pizza made of the Italian colours: red (tomato), green (basil) and white (mozzarella). From here, though, pizza has been changed and altered from country to country. France has the Tarte Flambée (Thin disc of dough, covered in crème fraîche, onions and bacon), Macedonian has its version called Pastrmajlija (A bread pie made from dough and meat with chopped meat on top) and there are even Garlic Fingers from Atlantic Canada (Made with a dough similar to pizza and covered with melted butter, garlic and cheese).

Living in Niagara, there are so many ingredients at your finger tips! So next time you feel like getting a little wild, throw together a delicious pizza and let your tongue do all the thinking.

All of our vineyards are farmed sustainably in order to preserve the natural balance of the vines and respect their terroir. We use traditional practices in the vineyard, which we feel helps maintain the quality of the fruit and its aromatic identity. Each parcel is treated individually according to its terroir specifications (climate, soil, disease pressure, etc.) and each vine is cared for by hand from pruning through to harvest.

Why we think this works – Claystone Terrace Chardonnay is a complex wine. The bouquet is elegant and intense as it displays ripe lemon, green apple, honey, wild white flowers with nuances of peach and pear. The chalky minerality of this wine adds firm structure and finesse. The richness and the firm tannins make this a great food wine.

This wine will be a wonderful accompaniment to the richness of the caramelized onions, creamy coconut milk and savoury artichoke. Read the full wine report here!
